We believe that every wine should tell a story—the story of its variety, production, aging, winemaking, the rains, the sun, and the land. The blessed and renowned land of Zitsa, Ioannina, gifts us with some of the finest Greek wines. This is why we have chosen to follow the less-traveled path, one that honors tradition while embracing a harmonious collaboration with modern technology.

Description

Orange Semi-Sparkling Wine

Color:

A distinctive orange hue, reminiscent of honey or tea (cognac-like shade).

Nose:

An intense and highly complex aromatic profile, featuring apple, butter, and sweet spices such as cinnamon and clove.

Palate:

Rich, refreshing, and well-balanced, with dominant flavors of apple, butter, light oxidation, cinnamon, and a hint of vanilla. The lingering aftertaste evokes notes of sweet cherry, while the refreshing bubbles enhance its intricate aromatic character with every sip.

Characteristics:

  • Protected Geographical Indication (P.G.I.): Ioannina
  • Variety: 97% Debina & 3% Vlachiko
  • Harvest: September 20 – October 10

Vinification:

The destemmed whole grapes undergo 12 days of fermentation in oak vats at ambient temperature. Once the temperature drops and fermentation ceases, the first racking (syphoning) is performed, followed by two to three more rackings throughout autumn and winter. The second fermentation occurs in a sealed tank, without any additional substances. The wine is then bottled with residual sweetness.

Serving:

Best enjoyed chilled at 10° - 12°C, allowing its aromas to fully develop.
